Texas native and Monarch Executive Chef Bradley Manchester brings a wealth of culinary experience from destinations such as the Rosewood Mansion on Turtle Creek in Dallas, the Four Seasons Hotel in Austin and the Renaissance Hotel and ENVY Steakhouse, both in Las Vegas. Imparting his vision of ingredient-focused American cuisine with a decidedly Tuscan twist into Monarch’s menu, Chef Manchester continues to experiment with innovative flavor pairings that both stimulate and satisfy the senses. The menu fuses Mediterranean flavors with seafood and a delectable selection of steaks, resulting in a blend of seasonal ingredients and clever flavor combinations

Deconstructed Ahi Roll

 

Ingredients

3 oz. tuna tartare

3 oz. crab ceviche

3 oz. avocado (diced)

3 oz. sushi rice, cooked

2 oz. sushi vinegar

1 Japanese cucumber

1 oz. truffle oil

1 oz. Sriracha hot sauce

1/2 oz. sesame oil

1/2 bunch of cilantro

1 oz. lemon juice

 

Method

1) Mix tuna, Sriracha hot sauce, truffle oil, sesame oil, salt and pepper for tartare; set aside. 2) In a separate bowl, mix crab meat, lemon juice and cilantro together; set aside. 3) In a separate bowl, mix cooked sushi rice and rice vinegar together; set aside. 4) Slice cucumber into small, thin rounds. 5) On the bottom of the serving plate, arrange cucumbers in a circle. 6) Using a ring mold, start with the sushi rice mixture, then layer the avocado, crab mixture, then top with tuna tartare.

 

To Serve

1) Unmold and serve immediately.
