Chef Steve Haug’s Shanghai Calamari is exclusive to Del Frisco’s Houston. Although it is not yet officially on the menu, the wait staff offers the dish as a feature item to customers. Due to the overwhelming feedback from guests, the calamari will soon be featured on all menus and prepared by Del Frisco’s chefs nationwide. This is the best calamari that Houston has to offer—with both sweet and spicy flavors and that additional bit of crunch provided by the peanuts. This recipe is very simple to execute and should be enjoyed in your homes as well!

Ingredients
6 oz. 1/4-inch sliced calamari tubes
2 oz. calamari tentacles
1 cup buttermilk
1 quart peanut oil
1 oz. 1/4-inch sliced banana peppers
1/2 cup bean sprouts
1/4 cup green onions, 1/4-inch sliced
4 oz. sweet chili sauce
1 tablespoon black and white sesame seeds
1/4 cup dry roasted peanuts, crushed
Flour breading
1 cup flour
1/4 cup parmesan
1/2 tablespoon cayenne pepper
1/4 cup garlic powder
Method
1) Soak calamari tubes and tentacles in buttermilk for at least one hour. 2) Mix flour breading ingredients together in small mixing bowl. 3) Drain off excess buttermilk from calamari and toss calamari in breading mixture. 4) Heat peanut oil to 350 degrees in small stock pot. 5) Shake off excess breading from calamari and place in hot oil. 6) Add banana peppers to oil and cook until calamari is golden brown and crispy—about 3 minutes. 7) Drain excess grease from calamari and put in mixing bowl. 8) Add bean sprouts, green onions, sweet chili sauce and sesame seeds. Toss well.
To Serve
Place calamari on plate and top with crushed peanuts. Serve immediately.
