Clear Lake’s best kept secret is The Colosseum Italian Restaurant, which has been family owned and operated for over 40 years. The Colosseum is a full-service restaurant that specializes in event planning and catering.

Chef Carl Johnston “CJ” has been in the business for over 20 years. He has appeared on the Food Network, cooked for the president and placed first in many events. CJ has worked at such hot spots as Sambuca Jazz Café as the executive chef and has overseen many large catering events. He plans to keep the Colosseum going for the next 40 years.

Seafood Pasta

 

Ingredients

6 mussels

6 clams

6 large Gulf shrimp

6 scallops

10 oz. linguine pasta

1 tablespoon garlic

1 oz. white wine

2 oz. clam juice

2 oz. heavy cream

2 oz. basil roasted tomatoes

1 tablespoon Romano cheese

 

Method

1) In a large sauté pan, add 1 oz. of butter over medium heat. 2) Sauté peeled shrimp for two minutes on each side. 3) Add scallops, clams, mussels, garlic, wine, clam juice and cream. Reduce by half. Sauce should become thick. 4) Add basil roasted tomatoes and Romano cheese.

 

To Serve

1) Use a large pasta bowl and place cooked hot linguine in a mound in the center of the bowl. 2) Place clams and mussels around the sides of the bowl and pour the rest of the seafood and sauce over the pasta.
